Making a hearty breakfast while camping in your pop-up camper doesn’t have to be ghastly. Each and every one of these breakfast ideas we have made and while some we have created through trial and error; I cannot take credit for their concepts. Many of these meals are from recipes from the web or friendly camper. While they were shared with me, I will do the same and pass them on to you! Though we tend to eat healthier these meals can be adjusted to your family’s diet. For years I was on the Atkins or Keto diet which I was able to sustain while camping. Give these a try and vamp them up as you like.
I will have to admit, in my current pop-up camper I have a fantastic cooking setup that I have mentioned in previous posts. They consist of propane or electric source. I house a small microwave in my camper that we rarely use but is there for items like popcorn or heating things quickly. I have a grill, griddle, electric burner, and stovetop. I also have many small appliances like a magic bullet, crockpot, toaster, and coffeepot. They take up little room and help me create many quality and healthy meals.
- Overnight Oatmeal- We love oatmeal in our mini crockpot. We also love to add in apples and cranberries. I will make it at night and wake up to it smelling amazing in the cabin and ready to eat when ready. We just add milk and walnuts when we are ready. This is versatile for any size group.
- Omelets- we make these in small ziplocked sandwich bags and very easy to clean up. I prep this breakfast out but adding eggs to a refrigerable container. I will also prep by chopping the ingredients like mushroom, peppers, ham and precook sausage or buy crumbles. You can I buy liquid eggs if you desire. You will need a cooler or refrigerator to keep this item to temp. When ready I boil a big pot of water, of course everyone has their favorite ingredients, so I add liquid egg to the bag cheese and what ever they desire. I will Ziplock it secure and added it to the boiling water. I cook it tell the eggs are finished usually 3 to 5 minutes, depending on how much they added in ingredients. I usually have toast or hash brown cakes served with this meal. So quick and easy to make, if you prep ahead of time.
- Pancakes/ Waffles and meat choice- this is good on a cold day or when you have a lot of mouths to feed. If it is just me and my daughter, I will make this that morning. If it is a large crowd, I will prep this before we go camping. I love to get a gallon or half gallon container and pre-make my batter ahead of time. I will also precook bacon but not all the way. I will head it up on the griddle when ready to use and the smell wakes everyone up! Even your neighbors. I will bring frozen sausage links and let them defrost in the refrigerator and cook them on the grill when ready. I also have syrup on hand with lots of butter. Everyone is usually full after a meal like this that it tides them down for a later lunch.
- Boiled eggs and toast- you can boil the eggs before your trip or on site. That will depend on how many people are camping in our party. I use my trusty toaster and breakfast is done! Side note: this makes a wonderful lunch as well! Just make a quick egg salad or maybe add tuna for more protein.
- Breakfast burritos- I will pre-make this at home and freeze them in a Ziplock bag, I will let the thaw in the cooler and usually have them mid-week. Use can make many variations depending on your picky quests. I will heat them up in the microwave or keep them in tinfoil and put them on the griddle
- French toast and meat- I usually pre-make the egg batter ahead of time and bring a big loaf Texas toast or brioche bread. If it is a large crowd, I will prep this before we go camping. - Muffins/ cinnamon rolls/ donuts with fruit- this is a very easy meal. I will pre-make the items or buy them at the store. We love those Sam’s Club muffins; they are generous and filling. I will also precut some fruit. If you’re wanting an easy day, buy precut fruit instead.
- Grilled ham and cheese breakfast sandwiches- I love the Hawaiian bread for this meal and wrap hap slices and your choice of cheese, we love Swiss cheese. I will wrap in tin foil and sit on griddle. 10 minutes and you have soft ooey gooey breakfast sandwich! This be served in many variations.
